When you're writing data to the hard drive, it's bottlenecked by processor power, not disk speed. You're not dealing with playback of multiple streams of data. RAID 1 benefits from being able to read from both disks at the same time, and is much, much more reliable than RAID 0, which has 1/2 the reliability of a single hard drive. With RAID 1, both drives would have to go down at the same time for you to lose any data, which is very unlikely to happen.
